Who doesn’t love a pizza with “grate” cheese?

  1. Mix altogether all the dough ingredients except for the olive oil in a food mixer fitted with a dough hook.
  2. Once dough is combined add the olive oil and continue to mix until the dough is medium soft and elastic.
  3. Divide dough as desired, shape into balls, cover with plastic wrap or a damp cloth and then bench rest for 30 to 40 mins until the dough has doubled in size.
  4. Flatten the dough, place on a baking tray, and top with tomato and a liberal amount of cheese.
  5. Bake in a stone oven or in a conventional oven at 250 °C to 300 °C, note that baking time may vary depending on your oven.
